Ingredients
  

  • 4-6 pieces Chicken preferably bone-in for enhanced flavor
  • 1 cup Yogurt thick and creamy
  • 2 tbsp Lemon juice freshly squeezed
  • 4-5 Garlic crushed or minced
  • 2 inch piece Ginger grated
  • 2 tbsp Tandoori chicken spices you can find pre-made tandoori spice mixes or make your own with a combination of ground cumin, coriander, paprika, turmeric, garam masala, and chili powder
  • 1 tbsp Salt
  • 2 tbsp Vegetable oil

Instructions
 

  • Start by making deep incisions in the chicken pieces to allow the marinade to penetrate. In a bowl, combine yogurt, lemon juice, minced garlic, ginger paste, and the tandoori spice mix. Massage this marinade into the chicken, ensuring all pieces are well-coated. Let the chicken marinate for at least 2 hours in the refrigerator, or overnight for even better results.

  • While the chicken is marinating, preheat your oven to 200°C (392°F). This higher temperature will help achieve the smoky, oven-baked flavor that is characteristic of tandoori chicken.
  • Take the marinated chicken out of the refrigerator and let it come to room temperature. Place the chicken pieces on a wire rack set over a baking tray. This setup ensures that any excess marinade will drip off, resulting in evenly cooked chicken.
  • Put the baking tray with the chicken in the preheated oven and bake for approximately 20-25 minutes, or until the chicken is cooked through and nicely charred. Turn the chicken pieces halfway through the cooking time to ensure even browning and flavor distribution.
  • Once the chicken is done, remove it from the oven and let it rest for a few minutes. This allows the flavors to settle and the juices to redistribute, resulting in a moist and tender final dish. Serve the tandoori chicken hot with freshly chopped cilantro, lemon wedges, and a side of mint chutney.
