In a blender, combine fresh coriander and beer to create a flavorful marinade.

In a large pan, sauté chopped carrots, onions, and red peppers until softened.
Add cumin, garlic, and yellow chilli paste to the pan and cook for a few minutes.

Brown the chicken breast in the pan.

Add the coriander marinade and the rest of the beer to the pan. Simmer for a few minutes to allow the alcohol to burn off.
Add rice and chicken stock to the pan, cover, and simmer for around 15 minutes or until the rice is cooked.

Finally, add frozen peas to the pan and continue to simmer until the majority of the liquid has been absorbed and the rice is cooked to perfection.
