  • Yellow chilli pepper paste Aji Amarillo or chipotle paste
  • Beer
  • Garlic
  • Cumin
  • Basmati rice

  • In a blender, combine fresh coriander and beer to create a flavorful marinade.

  • In a large pan, sauté chopped carrots, onions, and red peppers until softened.
  • Add cumin, garlic, and yellow chilli paste to the pan and cook for a few minutes.

  • Brown the chicken breast in the pan.

  • Add the coriander marinade and the rest of the beer to the pan. Simmer for a few minutes to allow the alcohol to burn off.
  • Add rice and chicken stock to the pan, cover, and simmer for around 15 minutes or until the rice is cooked.

  • Finally, add frozen peas to the pan and continue to simmer until the majority of the liquid has been absorbed and the rice is cooked to perfection.
