  • Prepare the marinade by mixing together oil, chopped chili, chili sauce, garlic, brown sugar, light soy sauce, dark soy sauce, ketchup, malt vinegar, tamarind paste, fish sauce, and white pepper.

  • Marinate the chicken in a portion of the sauce, while reserving the remaining sauce for later.
