Start by roasting the chicken. Heat your oven to 180°C. Put chicken on a roasting tray and add olive oil. Sprinkle salt, pepper, and herbs on it. Roast for 30-40 minutes until it's golden and cooked. Let the chicken cool when it's done.

As the chicken cools, make the sauce. Heat olive oil in a saucepan. Cook onions and garlic slowly until they're clear. Then, add tomatoes, purée, and a little sugar. Season with salt, pepper, and herbs. Let it simmer for 20 minutes to blend the tastes.

Cook the pasta like the package says. Boil a big pot of salted water. Drop in the tagliatelle and cook until it's chewy but firm, about 7-9 minutes. Save some water and drain the pasta.
Shred the cooled chicken with a fork or by hand into small pieces. Put this chicken into the sauce and mix well. If the sauce is too thick, use the pasta water to make it smoother.
Now, mix the pasta and chicken sauce together. Be gentle so the pasta is covered in sauce well.
Put your tasty dish on warm plates. Decorate with fresh basil or parsley. Sprinkle Parmesan cheese over it for more taste.
