- 1 pound boneless skinless chicken breasts, cut into bite-size pieces
- 10 cups chopped fresh spinach
- 4 cloves garlic minced
- 8 ounces gluten-free or whole-wheat penne pasta
- 2 tablespoons extra-virgin olive oil
- ½ cup dry white wine
- Juice and zest of 1 lemon
- 4 tablespoons grated Parmesan cheese divided
Cook the pasta according to package instructions and set it aside.
