Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 2 teaspoons chicken quesadilla seasoning
  • 8 small flour tortillas
  • 2 tbsp vegetable oil

Instructions
 

  • Start by heating a non-stick skillet over medium heat.

  • Place a tortilla in the skillet and sprinkle a generous amount of shredded cheese on one half of the tortilla.
    1 cup shredded cheddar cheese, 8 small flour tortillas
  • Add a layer of cooked chicken on top of the cheese. You can use grilled or shredded chicken, depending on your preference.

  • Sprinkle some diced onions and bell peppers over the chicken.

  • Fold the empty half of the tortilla over the filling, pressing it down gently with a spatula.
  • Cook the quesadilla on one side for about 2-3 minutes, or until it turns golden brown and crispy.
  • Flip the quesadilla using a spatula and cook the other side for an additional 2-3 minutes, until it is golden brown and the cheese has melted.
    1/4 cup chopped fresh cilantro
  • Remove the quesadilla from the skillet and place it on a cutting board. Let it cool for a minute or two before slicing it into wedges.
  • Repeat the process with the remaining tortillas and filling ingredients.
  • Serve the chicken quesadillas hot with your favourite toppings, such as salsa, guacamole, or sour cream.
