Start by heating a non-stick skillet over medium heat.
2 tbsp vegetable oil
Place a tortilla in the skillet and sprinkle a generous amount of shredded cheese on one half of the tortilla.
1 cup shredded cheddar cheese, 8 small flour tortillas
Add a layer of cooked chicken on top of the cheese. You can use grilled or shredded chicken, depending on your preference.

Sprinkle some diced onions and bell peppers over the chicken.

Fold the empty half of the tortilla over the filling, pressing it down gently with a spatula.
Cook the quesadilla on one side for about 2-3 minutes, or until it turns golden brown and crispy.
Flip the quesadilla using a spatula and cook the other side for an additional 2-3 minutes, until it is golden brown and the cheese has melted.
1/4 cup chopped fresh cilantro
Remove the quesadilla from the skillet and place it on a cutting board. Let it cool for a minute or two before slicing it into wedges.
Repeat the process with the remaining tortillas and filling ingredients.
Serve the chicken quesadillas hot with your favourite toppings, such as salsa, guacamole, or sour cream.
