Ingredients
  

  • 1 tbsp red wine vinegar
  • 2 tbsp olive oil
  • ½ tsp hot smoked paprika
  • ½ tsp dried oregano
  • Pinch of cayenne pepper
  • 1 tsp lemon juice
  • 1 chicken breast
  • ½ lemon
  • 1 garlic clove
  • 2 tbsp plain yoghurt
  • 2 tbsp mayonnaise
  • ¼ onion very thinly sliced
  • 1 large pitta bread or 2 mini pitta breads, warmed or toasted
  • 2 large lettuce leaves
  • 1 carrot peeled and then grated, shredded or peeled into ribbons
  • Salt and freshly ground black pepper

Instructions
 

  • In a small bowl, mix the red wine vinegar, olive oil, hot smoked paprika, dried oregano, cayenne pepper, and lemon juice to make the marinade.

  • Place the chicken breast in a shallow dish and pour the marinade over it. Make sure the chicken is thoroughly coated. Let it marinate for 10 minutes or refrigerate for a few hours.

  • In another bowl, combine the lemon zest, lemon juice, garlic, yogurt, and mayonnaise to create a creamy sauce.

  • Rinse the onion with boiling water to reduce its strong flavor.

  • Heat a frying pan and add the chicken fillets. Cook for about 5 minutes until browned and cooked through. Drizzle the marinade from the dish over the chicken towards the end of cooking.
  • Stuff the pitta bread with lettuce, carrot, onion, and the cooked chicken. Serve immediately.
