  • Start by soaking the rice noodles in a bowl of warm water for about 15-20 minutes, or until they are soft and pliable.

  • In the meantime, prepare the pad Thai sauce by combining tamarind paste, fish sauce, brown sugar, and a dash of lime juice in a small bowl. Mix well until the sugar is dissolved.
  • Next, heat some oil in a large pan or wok over medium-high heat. Add the minced garlic and cook for a minute or until fragrant.

  • Add the chicken breasts to the pan and stir-fry until they are cooked through and slightly browned. This usually takes about 5-7 minutes.

  • Once the chicken is cooked, push it to one side of the pan and add the sliced spring onions and beansprouts to the other side. Stir-fry for a few minutes until the vegetables are slightly tender.

  • Now, add the soaked rice noodles to the pan and pour the prepared pad Thai sauce over them. Mix everything together until the noodles are well coated in the sauce.
  • Continue cooking for another 2-3 minutes, stirring constantly, until the noodles are heated through.
  • Finally, remove the pan from the heat and sprinkle some crushed peanuts on top for added crunch and flavor
