Start by soaking the rice noodles in a bowl of warm water for about 15-20 minutes, or until they are soft and pliable.

In the meantime, prepare the pad Thai sauce by combining tamarind paste, fish sauce, brown sugar, and a dash of lime juice in a small bowl. Mix well until the sugar is dissolved.
Next, heat some oil in a large pan or wok over medium-high heat. Add the minced garlic and cook for a minute or until fragrant.

Add the chicken breasts to the pan and stir-fry until they are cooked through and slightly browned. This usually takes about 5-7 minutes.

Once the chicken is cooked, push it to one side of the pan and add the sliced spring onions and beansprouts to the other side. Stir-fry for a few minutes until the vegetables are slightly tender.

Now, add the soaked rice noodles to the pan and pour the prepared pad Thai sauce over them. Mix everything together until the noodles are well coated in the sauce.
Continue cooking for another 2-3 minutes, stirring constantly, until the noodles are heated through.
Finally, remove the pan from the heat and sprinkle some crushed peanuts on top for added crunch and flavor
