Ingredients
  

  • 180 grams 6.5 ounces of boneless chicken (breast/thigh/any)
  • Flavorings and seasonings such as spices paprika, garlic powder, onion powder, black pepper, salt, garam masala or store-bought seasoning
  • 1½ to 2 tablespoons of mayonnaise or Greek yogurt
  • 1 to 1½ tablespoons of sour cream Greek yogurt or cream cheese
  • ½ to 1 tablespoon of lemon juice optional
  • ¼ cup of shredded lettuce
  • 2 tablespoons of chopped cilantro parsley, or dill
  • 2 tablespoons of finely chopped red onion
  • Bread of your choice white bread, whole meal bread, baguette, or bloomer
  • Butter for toasting the bread slices

Instructions
 

  • Heat a pan with 1 tablespoon of oil and cook the chicken for 3 to 5 minutes on each side until fully cooked.

  • Optional: Add 1 tablespoon of butter to the pan for extra moisture.
  • Season the cooked chicken with spices according to your preference.

  • Let the chicken cool completely, then shred or cut it into smaller pieces.
  • In a mixing bowl, combine the shredded chicken with mayonnaise, sour cream, or Greek yogurt.
    1½ to 2 tablespoons of mayonnaise or Greek yogurt, 1 to 1½ tablespoons of sour cream Greek yogurt or cream cheese, ½ to 1 tablespoon of lemon juice, 2 tablespoons of chopped cilantro
  • Add the shredded lettuce, chopped cilantro, red onion, and other seasonings like mustard and black pepper.

  • Mix everything together until well combined. Adjust the seasonings to taste.
  • To toast the bread slices, heat a pan on medium heat. Spread butter on one side of each bread slice and place them butter-side down in the pan.

  • Cook for a few minutes until the bread is golden and crispy. Flip and cook the other side.
  • Spread a small amount of mayo or yogurt on one side of each bread slice using a spatula.
  • Place lettuce on one slice, then spoon the chicken mayo filling on top.
  • Cover with the other slice of bread.

  • Slice the sandwich and serve immediately.
