Heat oil or ghee in a large pot or karahi.

Add the chicken pieces and cook until they start to brown.

Add minced ginger, minced garlic, and a blend of spices (cumin, coriander seeds, Kashmiri red chilli powder, salt, and black pepper). Stir well to coat the chicken.

Add the chopped tomatoes, fresh cilantro, and green chillies. Stir again.

Cook the Karahi on medium heat, stirring occasionally, until the chicken is cooked through and the tomatoes have broken down to create a thick gravy.
Garnish with additional cilantro and green chillies.
Serve hot with naan bread or pita bread.
