Ingredients
  

  • Chicken bone-in medium chicken
  • Fresh ginger
  • Fresh garlic
  • Fresh tomatoes
  • Fresh green chillies
  • Cumin
  • Coriander seeds
  • Kashmiri red chilli powder
  • Salt
  • Black pepper
  • Oil or ghee
  • Fresh cilantro

Instructions
 

  • Heat oil or ghee in a large pot or karahi.

  • Add the chicken pieces and cook until they start to brown.

  • Add minced ginger, minced garlic, and a blend of spices (cumin, coriander seeds, Kashmiri red chilli powder, salt, and black pepper). Stir well to coat the chicken.

  • Add the chopped tomatoes, fresh cilantro, and green chillies. Stir again.

  • Cook the Karahi on medium heat, stirring occasionally, until the chicken is cooked through and the tomatoes have broken down to create a thick gravy.
  • Garnish with additional cilantro and green chillies.
  • Serve hot with naan bread or pita bread.
