Ingredients
  

  • Olive oil
  • Chicken thighs
  • Dry white wine
  • Onion
  • Garlic
  • Fresh thyme
  • Crème fraîche
  • Lemon
  • Honey
  • Baby spinach
  • Gnocchi
  • Mature Cheddar
  • Fresh parsley
  • Sea salt
  • Cracked black pepper

Instructions
 

  • Preheat the oven to 180°C (350°F).
  • In a frying pan, heat olive oil over medium heat.

  • Add chicken thighs to the pan and cook until golden brown. Remove the chicken from the pan and set aside.

  • Deglaze the pan with white wine, scraping up any browned bits.

  • Add onions, garlic, and thyme to the pan. Cook until the onions become translucent.

  • Return the chicken to the pan and stir in crème fraîche, lemon zest, lemon juice, and honey.

  • Simmer the mixture for 5 minutes, allowing the flavors to meld together.
  • Add spinach and gnocchi to the pan, stirring gently to combine.

  • Transfer the mixture to a baking dish and sprinkle with grated Cheddar cheese.

  • Bake in the preheated oven for 20-25 minutes, or until the cheese is golden and bubbling.
