  • Potatoes diced into small cubes
  • Onion finely chopped
  • Garlic cloves minced
  • Red bell pepper finely diced
  • Olive oil for sautéing
  • Ground cumin
  • Paprika
  • Dried oregano
  • Salt and pepper to taste
  • Chicken broth
  • Raisins for a touch of sweetness
  • Pitted green olives for a tangy flavor

Instructions

  • To start, heat a tablespoon of olive oil in a large pan over medium heat. Add diced onions and cook until they become translucent. Then, add minced garlic and cook for another minute. Next, add diced chicken breast and season it with salt and pepper. Cook the chicken until it's no longer pink. Finally, stir in your choice of spices and herbs, such as cumin, paprika, or oregano, to enhance the flavor of the filling.

  • In a mixing bowl, combine flour, salt, and cold butter. Use your fingers or a pastry cutter to rub the butter into the flour until the mixture resembles coarse crumbs. Add cold water gradually while mixing until the dough comes together. Knead the dough for a few minutes until it becomes smooth and elastic. Divide the dough into smaller portions and shape them into discs. Wrap each disc in plastic wrap and refrigerate for at least 30 minutes.

  • Remove the dough from the refrigerator and let it sit at room temperature for a few minutes. Take one disc of dough and roll it out on a lightly floured surface to a thickness of about 1/8 inch. Use a round cutter or a glass to cut out circles from the dough. Place a spoonful of the chicken filling in the center of each circle. Fold the dough in half to form a half-moon shape and seal the edges by pressing them together. You can use a fork to create a decorative edge if desired.

  • Preheat your oven to 400°F (200°C). Place the assembled empanadas on a baking sheet lined with parchment paper. Brush the tops of the empanadas with beaten egg for a golden finish. Bake them in the preheated oven for about 20 minutes or until they turn golden brown.
