Start by peeling and cutting the onions. One onion should be cut into wedges, while the rest should be finely diced.
Onions
In a pan, fry the onion wedges in a little oil or ghee until they become soft and turn golden around the edges. Once done, remove the onion wedges from the pan and set them aside.
Chicken thighs
Using the same pan, fry the diced onions until they become golden brown.
Add the spices to the onions and cook them until the aroma becomes fragrant.
Spices
Next, stir in the canned tomatoes, chicken stock, garlic and ginger paste, and scrape all the onion from the bottom of the pan to incorporate it into the sauce.

Transfer the mixture to a blender and blend until it becomes smooth.
Return the blended sauce to the pan and add the chicken, green chillies, and cardamom pods.
Green chillies
Cover the pan and let the chicken simmer for about 25 minutes, or until it is cooked through.
Finally, add the fried onion wedges to the curry and stir until everything is hot and well combined.
Serve the chicken dopiaza garnished with a dollop of yoghurt or cream, fresh coriander, and sliced chillies for an extra kick of flavour.
