Ingredients
  

  • Chicken thighs skinned, boned, and cut into pieces
  • Onions brown or a mix of red and brown
  • Spices curry powder, ground cumin, ground coriander, paprika, medium chilli powder, cardamom pods, and garam masala
  • Garlic paste
  • Ginger paste
  • Canned tomatoes
  • Green chillies
  • Chicken stock
  • Oil or ghee

Instructions
 

  • Start by peeling and cutting the onions. One onion should be cut into wedges, while the rest should be finely diced.

  • In a pan, fry the onion wedges in a little oil or ghee until they become soft and turn golden around the edges. Once done, remove the onion wedges from the pan and set them aside.

  • Using the same pan, fry the diced onions until they become golden brown.
  • Add the spices to the onions and cook them until the aroma becomes fragrant.

  • Next, stir in the canned tomatoes, chicken stock, garlic and ginger paste, and scrape all the onion from the bottom of the pan to incorporate it into the sauce.

  • Transfer the mixture to a blender and blend until it becomes smooth.
  • Return the blended sauce to the pan and add the chicken, green chillies, and cardamom pods.

  • Cover the pan and let the chicken simmer for about 25 minutes, or until it is cooked through.
  • Finally, add the fried onion wedges to the curry and stir until everything is hot and well combined.
  • Serve the chicken dopiaza garnished with a dollop of yoghurt or cream, fresh coriander, and sliced chillies for an extra kick of flavour.
