Mix the beans with the tomatoes, half the onion, half the coriander, cumin, lime juice, and season.

Mash the avocado with lime juice, the rest of the onion and coriander, chilli, and season.

Heat a pan and add chipotle paste, tomato purée, red wine vinegar, and stock. Simmer and cook for 5 minutes. Stir in the chicken and cook until piping hot.

Divide the beans between the tortillas, then spoon the hot chicken on top followed by cheese and guacamole. Fold and roll up into a burrito. Cut in half and serve.
