Instructions
 

  • Start by preheating your oven to 375°F (190°C). This ensures that the chicken is even cooked.
  • While it's warming up, season two boneless, skinless chicken breasts with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-high heat.

  • Once the oil shimmers, add the chicken breasts. Sear them for about 5 minutes on each side until golden brown. Don't rush this step; browning adds depth of flavour.
  • Next, layer fresh mozzarella slices on top of each breast, followed by ripe tomato slices and fresh basil leaves. Drizzle balsamic glaze generously over everything.

  • Transfer the skillet to your preheated oven and bake for about 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C). You want it juicy but fully cooked!
