  • 10 chicken thighs or drumsticks
  • 500 ml buttermilk or 250ml plain yogurt mixed with 250ml milk
  • 100 g plain flour
  • 50 g cornflour
  • Dried oregano
  • chilli powder
  • dried sage
  • dried basil
  • dried marjoram
  • ground white pepper
  • table salt
  • sweet paprika
  • smoked paprika
  • onion salt
  • garlic powder

Instructions
 

  • Marinate the chicken in buttermilk (or yogurt and milk mixture) for 12 hours to tenderize and infuse flavor.
    500 ml buttermilk, 10 chicken thighs or drumsticks
  • Mix the flours and spices to create the coating mixture.
    100 g plain flour, 50 g cornflour, Dried oregano, chilli powder, dried sage, dried basil, dried marjoram, ground white pepper, table salt, sweet paprika, smoked paprika, garlic powder, onion salt
  • Coat the marinated chicken in the dry mix, ensuring even coverage.
  • Shallow fry the chicken in hot oil until it turns golden brown and crispy.
  • For an extra crunch, finish the chicken in the oven for a few minutes.
